Christmas Negroni

This drink is made with infused gin, which makes it extra special. Make the infused gin as far ahead as possible – a week or two at least. Gently bring the mixture to the boil and then simmer it over a low heat for approximately 8-10 minutes. It will form a light syrup, at which point you can take it off the heat and leave it to cool. Once it is cold, pour the cooled syrup and its infusions into a glass bottle and top it off with the gin. Shake it up and leave it for at least a week so that the flavours can infuse into the gin. Afterwards, strain it before you use it.
